Lasagna Roll Ups for Picky Eaters


Today we have a super easy recipe for Lasagna Roll Ups submitted by Lynn Boggs. Sometimes the kids can be picky but this recipe was a hit with everyone at Lynn’s house. There is no spinach or ricotta cheese in this recipe. I bet even my pickiest husband in the world would eat these.

Keep in mind that this recipe is adaptable to fit your family. If they love meat then just increase the amount but be careful that you can still roll up your lasagna noodle. If your family eats sauce from a jar then feel free to use it. Personally, I love sauce and always double the sauce in most recipes but I don’t know this looks pretty good how it is written. That is the beauty of it…you can do it your way. If your family likes spinach in their lasagna just add it.

But here is how Lynn makes hers and her whole family loved it. This time she used a package of mixed cheese when she made it – see just use what you have on hand. I can’t wait to try it. I am thinking this would be a good recipe to freeze in single portions. It would also be the perfect recipe to take to the church potluck.

My favorite lasagna pan is a 14″ x 10″ nonstick pan by Wilson but really a simple cake pan works just as well if you aren’t making a huge batch. (then just use 2 cake pans)

I did see one from Rachael Ray I would love to have with a case and everything to take to potlucks. But I generally get by with cake pans with a metal lid. (Don’t buy the ones with the plastic lids because they break. My cake pan with the metal lid has lasted for 13 years and going strong.)

Lasagna Roll Ups
Lasagna with a little bit of fun. These lasagna roll ups are so easy to make and usually a big hit. Customize them for your own family. This recipe is for the picky ones. This doesn't even have canned sauce because the kids know mom will make them the good stuff.

Instructions
  1. Cook lasagna noodles according to package directions. Mix together all the sauce ingredients and let simmer in a covered sauce pan for 20 minutes. Brown your hamburger. Once the noodles are done and cooled. Lay them out flat on a cutting board or other flat surface. Begin by adding about a tablespoon of hamburger to the top of the noodle, next add sauce and top with cheese. Start at one end of the noodle and roll up. Pour 1/2 cup of sauce into bottom of baking pan about 9 x 13 or whatever you have on hand. Place lasagna rolls on top of sauce in the pan. Continue with each noodle until the pan is full. Top with the rest of the sauce and the mozzarella cheese. Cover with foil and bake at 350 degree oven for 20 minutes.
